- 2 cups corn kernels
- 1 dill pickle, chopped
- 1 sweet orange pepper, chopped
- 2 cups cilantro, chopped
- 1 onion, chopped
- 1/2 cup pickle juice
- 2 tbsp. olive oil
- Mix all ingredients and chill for 2 hours.
