POP Nutrition | Curried Butternut Squash {Paleo, Gluten Free, Vegan}

I used the Red Curry Paste from last week and it made even butter squash taste delicious. That is is you do not particularly care for it (it is too sweet for my taste) and if you do then it will be even better. I am definitely putting this one on the list of my favorites.

Ingredients:

  • 1 cup Red Curry Paste
  • 1 medium butternut squash, cut into 1 inc cubes
  • 1/2 lb. sweet peas, frozen or fresh
  • 1 onion, chopped
  • 1 tbsp. cumin
  • 1 tbps. smoked paprika

Cooking Method:

  1. Pre-heat the oven to 220C or 450F.
  2. Place all ingredients into a cast iron pot. Cover and cook for 30 min or until squash is soft.
