POP Nutrition | Sesame Eggplant Dip {Gluten Free, Paleo, Vegan}

And again I bring you one more wholesome dip addition to our Free2BFit collection :

This time it is Sesame Eggplant Dip .

Ingredients:

  • 2 medium eggplants
  • 3 large clove garlic, grated or finely minced
  • 1 lemon, juiced
  • 1/3 cup sesame seeds
  • 1 cup parsley, chopped
  • 2 tbsp. olive oil

Cooking Steps:

  1. To cook the eggplant: Preheat the oven to 220 C or 350 F. Slice the eggplant into 1/2 inch circles and place on a lined baking sheet. Cook for 20 min or until tender and almost falling apart. When ready, remove from the oven and let them cool down. Remove the peel.
