POP Nutrition | Chewy Blueberry Oatmeal Snack

Hi guys,

Hope you had a great 4th of July. My boyfriend and I went to an Orchard and had a day of picking blueberries and cherries. I pretty much ate so much I was stuffed for the day.

Ingredients:

  • 1 cup blueberries
  • 1 cup almond meal
  • 2 eggs
  • 1 tsp. baking powder
  • 1 tbsp. pumpkin spice
  • 2 tbsp. vanilla extract
  • 1 cup oatmeal

Cooking Steps:

  1. Mix all wet ingredients and mix well. Fold in dry ingredients.Chewy Blueberry Oatmeal Snack batter
  2. Pre-heat the oven to 350 F. Line up cookie sheet with foil and form round cookie snack (makes about 6 large chewy snacks).Chewy Blueberry Oatmeal Snack before cooking
  3. Bake for 9 min.
