I have been first sick then swamped at work. Finally getting some evening time to blog.

I always liked crab cakes and the many wonderful combinations everyone seems to come up with. So I decided that Today’s special will be Tender Crab Cakes With Spring Slaw:Tender Crab Cakes With Spring Slaw 2

Tender Crab Cake Ingredients:

Spring Slaw Ingredients:

  • 2/3 small green cabbage shredded
  • 2 shredded carrots
  • 1 cup Sassy Free2BFit Russian Mayo
  • 1 onion
  • 1 cup shredded cilantro
  • 1 garlic clove crushed

Tender Crab Cake Cooking Steps:

  1. Place crab meat in a bowl and break it down with a fork.
  2. Fold in chopped cilantro, creamy goat cheese, eggs, oil, couscous, and seasoning. Mix well. crab cake mixture
  3. Chill covered for 15 min.
  4. When ready place 1/3 cup of almond meal in a plate.
  5. Preheat the over to 350F.
  6. Shape flat round crab cakes and place on the almond meal. almond meal scrumbs
  7. Flip so that it covers the entire crab cake. almon dmeal crumbs 3
  8. Line a cookie sheet with foil and place ready crab cakes on the sheet. Tender Crab Cakes before baking
  9. Place egg wash on each crab cake then bake for 15 min, flip ans bake for another 15 min. tender crab cakes cooked 3

Spring Slaw with Sassy Free2BFit Russian Mayo Cooking Steps:

  1. Shred carrots, onion, and cabbage.
  2. Chop cilantro and fold in crashed garlic. Spring Slaw

  4. Mix all indigents together.
